I don’t know who concocted this amazing recipe, but I’d thank him or her if I could! I got this recipe from a friend…I’m not even sure if she knows where it originated. She called it Cheesy Side Dish Spinach. We use it as a dip. With or without chips, it’s fabulous! This cheesy, spinach mixture is sure to please kids and grown-ups alike! YUM!
Here’s the recipe:
- 6 eggs
- 2 lbs small curd cottage cheese
- 4 cups cheese (cheddar or any kind)
- 1/2 cup butter, melted
- 2 (10 oz) packages frozen spinach, thawed and drained OR 1 grocery bag full of fresh spinach from the garden
- 2 TBSP flour (I don’t add any.)
- 1/2 to 3/4 tsp salt
- lots of fresh cracked black pepper
- a little garlic powder
Beat eggs in large bowl. Stir in remaining ingredients. Pour into a casserole dish. Bake uncovered at 350 degrees for 1 hour or at 375 degrees for about 45 minutes.
*If using fresh spinach, sautee it in the recommended amount of butter. Then add spinach and butter to the rest of the ingredients.
