This is my tried and true pancake recipe! I make these for our family of six and usually have some left over.
Pancakes from Scratch:
*4 cups flour (white, whole wheat, spelt, your choice…)
*2 tsp salt
*4 tsp baking powder
*4 TBSP sugar
* 6 eggs, whisked
*approx 1 1/2 cups olive oil or melted butter
*milk, enough to make batter the consistency you desire (approx 1 to 1 1/2 cups per cup of flour)
*vanilla, a little if desired
Mix dry ingredients together. Add milk, whisked eggs, oil or butter, and vanilla. Mix well and add more milk if needed. Cook until golden brown and done all the way through on greased griddle or pan.
