We harvested, sold some, and saved some potatoes from Summer of 2021. We stored our potatoes in the barn in plastic boxes seen in the image below. We’ve been eating potatoes from the barn since Summer…it’s January 15th. When the time came to set some aside for planting in 2022, we went through the potatoes in the barn and selected around 200 pounds total of red, white, and yellow ones. It feels good to have potatoes to eat for months and to go from seed to seed!
